    How to care for, clean and season enamelled cast iron pot?

    Enamelled cast iron cookware is a star in the kitchen. It retains heat for a long period of time, making it ideal for slow cooking meats and vegetables in order to achieve immaculate tenderness. This cookware will last a lifetime when it is treated with the love and care it deserves.

    These 6 tips show you how to take care of this workhorse of the kitchen.

    1 - Avoid using metal utensils. Even though the surface is fairly durable, it's best to use wooden, nylon or silicone utensils to keep from scratching or chipping the enamel.

    2 - Cook with liquid. This cookware isn't suitable for dry cooking. Always use oil, butter or other cooking liquid in the pot before you start cooking.

    3 - Beware of using high heat. A medium setting will maintain a steady temperature for a long time.

    4 - Let it cool down before washing. When washing a hot vessel, wait until it has cooled down before putting cold water in it. Its beautiful enamel coating can be damaged by cold water. DO NOT use in a dishwasher.

    Use soap when needed. If something is really stuck on the pot, use soap, hot water and a non-abrasive pad to scrub it off.

    6 - Season the edges. Enamelled cast iron doesn't need to be completely seasoned like a traditional cast iron skillet. However, there is a thin border of exposed cast iron along the rim of the vessel and lid that needs to be seasoned in order to protect the surface. To season, use a paper towel to rub a light coating of neutral, high smoke-point oil (Canola Oil is a desirable option) on the edge, where the cast iron is exposed.
